Mix
olive oil with balsamic vinegar in large bowl. Add Vegetables
(except tomatoes) and toss. Line a baking sheet with heavy-duty
aluminum foil and spray with non-stick spray. Put vegetables
on the cookie sheet and spread out. Sprinkle with seasonings.
Crumble cheese over veggies and bake in 425 degree oven for
about 40 minutes until veggies are barely crisp tender. Add
tomatoes and cook another 2 minutes.
