Vegetable Couscous
If you're in a hurry for a dinner dish, keep couscous on hand. It's pasta that cooks in just 4 minutes.
 
  Ingredients
¾ cup dry couscous
1 cup   zucchini slices
1 cup

carrot slices

1 cup pepper slices
2 broccoli spears
1 Tbsp olive oil
1 clove garlic minced
¼ tsp basil
½ tsp salt
¼ tsp pepper
 
     
  Method  
Wash and prepare vegetables. Bring 2 ½ cups water to a boil with salt. Add couscous and cover for 4 minutes. Heat non-stick skillet and add oil. Saute vegetables, garlic, and basil until crisp tender. Fluff couscous with fork, and combine with vegetables, sprinkle with pepper.
