Joe's Potato Salad ala Arlington
 
  Ingredients -
3 pounds potatoes (about 7-8)
1

medium sweet onion chopped

1

large bunch of parsley chopped

4 stalks of celery chopped
juice of 2 medium to large lemons
½ cup low fat mayonnaise (reduced fat mayonnaise is excellent)
½ cup fat free mayonnaise
1 tsp salt
1 tsp fresh ground pepper
 
     
  Method -  
Boil potatoes - don't over cook. Peel when hot, and cut into chunks. Combine all ingredients together. Refrigerate. Better if made the day before.
