FRESH HOLIDAY CRANBERRY RELISH
 
  Ingredients
1 orange
12 ounces fresh cranberries
2

medium tart apples, unpeeled

1 cup walnut pieces
1 cup granulated sugar substitute
 
     
  Method  

Grate rind from orange and set aside. Peel orange and cut into large pieces. Core and chop apples. Place orange pieces, rind, apples, and walnuts into food processor; process until finely chopped. Stir in sugar substitute.

Refrigerate until serving time.

Variation: CRANBERRY GELATIN SALAD

Prepare 2 pkg. sugar free raspberry gelatin according to directions, using 1-1/2 cups boiling water, and 1-1/2 cups cold water; refrigerate until gelatin mixture is the consistency of unbeaten egg whites.

Prepare Cranberry Relish as above; stir into gelatin mixture, and spoon into lightly greased 8-cup mold. Refrigerate until set, approximately 4 hours. To unmold, dip mold into warm water for 15 seconds, and loosen edges with a sharp knife or spatula. Remove onto serving plate garnished with holiday greens, and dollop with whipped topping.
