Grate rind from orange and
set aside. Peel orange and cut into large pieces. Core and
chop apples. Place orange pieces, rind, apples, and walnuts
into food processor; process until finely chopped. Stir
in sugar substitute.
Refrigerate
until serving time.
Variation:
CRANBERRY GELATIN SALAD
Prepare
2 pkg. sugar free raspberry gelatin according to directions,
using 1-1/2 cups boiling water, and 1-1/2 cups cold water;
refrigerate until gelatin mixture is the consistency of
unbeaten egg whites.
Prepare
Cranberry Relish as above; stir into gelatin mixture, and
spoon into lightly greased 8-cup mold. Refrigerate until
set, approximately 4 hours. To unmold, dip mold into warm
water for 15 seconds, and loosen edges with a sharp knife
or spatula. Remove onto serving plate garnished with holiday
greens, and dollop with whipped topping.
