Auntie Ann's Potato Salad
 
  Ingredients
3 pounds small red potatoes washed
2 cups celerey chopped
¼ cup

sweet onion, chopped

½ cup sweet red pepper, chopped
   
Dressing  
1 ½ tsp Dijon mustard
1 Tbsp red wine vinegar
1 ¼ cup fat free mayonnaise
3 Tbsp sweet relish
3 ½ Tbsp red onion, chopped fine
3 ½ Tbsp parsley, chopped fine
Pepper to taste  
 
     
  Method  
Cook potatoes in water until tender. Drain and cut into chunks. Add celery onion and red pepper. Mix dressing ingredients together, toss with salad ingredients in large bowl. Chill.
