Heat
oil in heavy sauce pan. Add rice and sauté until light brown.
Add onion and mushrooms and continue to cook stirring until
onions are translucent. Add water artichoke hearts and soybeans.
Stir and cover and reduce heat to lows Simmer 25-30 minutes
until rice has absorbed all the liquid and is tender.
