Chicken Cacciatore
 
  Ingredients
2 boneless skinless chicken breasts
2 skinless chicken thighs
2 skinless chicken legs
Non-stick vegetable spray  
¼ cup flour
½ tsp salt
¼ tsp pepper
½ tsp paprika
1 Tbs p olive oil
½ cup chopped onion
½ cup chopped green pepper
½ cup chopped carrots
1 cup sliced mushrooms
2 garlic cloves minced
2 cups crushed canned tomatoes
1 bay leaf
¼ cup red or white dry wine
parsley for garnish  
 
     
  Method  
Mix together flour, salt, pepper and paprika. Coat chicken with flour mixture. Spray non-stick skillet with vegetable spray, heat to medium and add olive oil. Brown chicken pieces in oil. Remove chicken and keep warm. Add onions, pepper, carrots, mushrooms, and garlic and sauté until crisp tender. Add tomatoes, bay leaf, and wine and browned chicken pieces. Cover and simmer until chicken is done (no pink showing at bone).

* Sodium can be reduced by using low sodium tomatoes or fresh tomatoes, and using salt substitute instead of table salt. Check with your physician about using salt substitutes.
