Apple Bran Muffins
 
Ingredients -
2 medium apples, peeled, cored and diced
1 Tbsp lemon juice
3/4 cup frozen apple juice concentrate, thawed
1 cup buttermilk
1 3/4 cup flour
1/2 cup wheat bran
1/2 cup oat bran
1 Tbsp baking powder
1 Tbsp baking soda
1 Tbsp cinnamon
1/2 Tbsp nutmeg, ground
1 Tbsp vanilla
1 Tbsp orange peel, grated
1 Tbsp brown sugar
  egg whites, lightly beaten
 
     
  Method -  
Line muffin tins with paper muffin cups, or spray with non-stick spray. Combine lemon juice and apple juice concentrate together and stir in apples. Let soak for 1 hour. Combine dry ingredients in a mixing bowl and add milk, egg whites, vanilla and orange peel. Mix thoroughly but do NOT beat. Fold in apples along with the liquid in which they have been soaking. Fill muffin tins 2/3 full. Bake in preheated oven at 375° F. for 20 minutes.
