Spinach Dip
(Adapted from Soyfoods: Their Benefits, Where To Buy Them and Recipes, Michigan Soybean Promotion Committee, originally from 1999 Indiana Soy food locator guide)
 
  Ingredients
1 - 10 ounce package frozen chopped spinach – thawed and squeezed dry
1 - 1.4 ounce package dry vegetable soup mix
1 - 12 ounce package Silken Tofu
1 - 8 ounce can water chestnuts - drained and chopped
2/3 cup green onions - chopped
1 cup reduced-fat sour cream
½ cup reduced-fat mayonnaise
1 clove garlic - minced
 
     
  Method  

Mix tofu, sour cream, mayonnaise, soup mix, and garlic together until smooth. Add the rest of the ingredients and combine.

Cover and chill 2 hours or overnight before serving.
