Holiday Pumpkin Bread

 

 
  Ingredients
1 cup
sugar
½ cup
margarine
2
eggs
2 ¾ cups
pumpkin pie mix (make sure it is the mix because it contains the spices)
2 ½ cups
flour
1 tsp
baking soda
½ tsp
salt
1 tsp
vanilla
1 cup
chopped walnuts (optional)
1/3 cup
golden raisins (optional)
½ cup
coconut (optional)
 
     
  Method  
Preheat oven to 350° F. Grease and flour 2 medium loaf pans. Set aside. Using a mixer, cream together sugar, margarine, and eggs. Beat well. Add pumpkin pie mix and stir in by hand. Stir in flour, baking soda, salt and vanilla. Add optional ingredients walnuts, raisins, and/or coconut. Pour batter equally into the two pans. Bake at 350° F, 45-55 minutes, or until toothpick comes out clean. Turn out of pans and cool on rack. This is a good make ahead recipe as it freezes well.
