Chinese Chicken Salad
 
  Ingredients
2 chicken breast halves (skinless and thinly sliced)
2 Tbsp  stir fry sauce
6 cups

Savoy or Nappa cabbage shredded or thinly sliced

2 - 3 green onions sliced
½ cup green onions sliced
3 Tbsp toasted sesame seed
1 ounces peanuts
   
Dressing:  
¼ cup
rice vinegar
1-2 packets
artificial sweetener
2 Tbsp
peanut oil
1 Tbsp
soy sauce
¼ tsp.
pepper
½ tsp.
sesame oil
 
     
  Method  
Combine cabbage, cilantro and onions in large bowl. Mix dressing ingredients in a jar to combine easily as they will separate upon standing. Heat non-stick skillet, coated with non-stick spray, until very hot. Stir fry chicken with sauce until done. Add sesame seed peanuts and hot chicken to cabbage mixture. Toss with dressing.
