Robin's Low Fat Creamed Spinach
(Very similar to Boston Market's)
 
  Ingredients
1 package frozen chopped spinach
1 cup 1% milk
1.5 Tbsp Cornstarch
1 package Butter Buds®
1 clove garlic minced
  Non stick Vegetable oil spray
½ cup grated Low Fat mozzarella cheese
  Dash Black Pepper
  Dash Nutmeg
¼ tsp salt
 
     
  Method  
Cook Spinach in microwave until totally thawed and partially cooked. Squeeze out excess water using a sieve. Spray sauté pan with non-stick spray, add minced garlic and sauté on medium heat until translucent but not brown. Mix together milk, cornstarch, and butter buds until well blended. Combine in a saucepan milk mixture, garlic and drained spinach. Cook stirring constantly until thick. Boil for 1 minute. Stir in cheese and seasonings.
