Pumpkin Muffins
 
  Ingredients
2/3 cup nonfat dry milk
6 Tbsp flour
1 tsp baking soda
2 tsp pumpkin pie spice
1 tsp cinnamon
  sugar substitute to equal 12 tsp. sugar
2 eggs
1 cup canned pumpkin
1 tsp vanilla
½ cup grated carrots or zucchini
½ cup applesauce
 
     
  Method  

Combine dry ingredients in bowl.

In separate bowl combine wet ingredients.

Slowly add dry ingredients to wet ingredients. Do not over mix.

Fill muffin tins that have been sprayed with non-stick spray about 2/3 full. Bake at 350 degrees for 20 minutes.
