Apple Apricot Waldorf Salad
 
  Ingredients
2 large green apples
2 large red apples
¼ cup lemon juice
6 ounces dried apricots chopped
½ cup walnuts chopped
¾ cup fat free mayonnaise or salad dressing
to taste Aspartame (Equal®, NutraSweet®) or equivalent artificial sweetener
 
     
  Method  
Core apples and cut in LARGE chunks. Pour lemon juice over cut up apples to prevent browning. Chop or snip apricots into small pieces. Combine apples, apricots, walnuts, and mayonnaise together. Taste and add artificial sweetener to your liking (some apple lovers like it tart, and some like it sweet!)
